Doc Bear's Colorful Deviled Eggs
A vibrant twist on the classic deviled egg! These colorful eggs use food coloring to create rainbow-hued egg whites while maintaining the traditional creamy, tangy yolk filling. Perfect for parties, holidays, or whenever you want to add some fun to your appetizer spread.
Ingredients
- 6 each eggs, hard-boiled
- 1 Tbsp mayo
- 1 Tbsp white vinegar
- 1 Tbsp mustard
- Salt and white pepper
- Paprika
- Green onion
- Food coloring
- 4 Tbsp Additional white vinegar for coloring
Instructions
- Peel the hard-boiled cooked eggs, and then Cut them lengthwise and carefully remove the yolk portion. Place the yolk in a bowl and the egg white on a plate or platter. Continue until all boiled eggs are sliced and separated.
- Carefully wash the egg whites either under slow cold running water or fill a bowl with cold water and wash the egg white to remove any excess yolk residue or shell cuticle from the outside.
- Take a Cup large enough to hold one half egg white and fill with ½ Cup of cold water and 1 Tbsp of white vinegar.
- Then add 5 drops of your food coloring of choice.
- Place one half egg white in the color solution and allow to dye for about 5 minutes.
- The longer it sets, the darker the color.
- You may need to add more coloring if it is not getting as dark as you like.
- A full red is very difficult to achieve from my experience.
- Continue until all egg whites are the color you wish them to be.
- While the egg whites are coloring, smash the yolks into a fine crumble using a fork.
- Add mayo, vinegar, mustard, dill pickle juice to make a soft paste, add the salt and white pepper and mix well.
- Take a small taste and adjust seasoning as needed.
- Filling is ready to be placed into egg whites. I use a plastic sandwich bag, cut a corner and pipe the mixture into the egg whites.
- Finally, add any garnishments to the deviled eggs.
