Kay's Soup Doc Bear's Updated Version

An updated version of the family soup recipe using fresh ingredients and homemade stock. This improved version includes a personal family story about the author's finicky sister and her eating habits.

Ingredients

  • 1 lb Ground beef
  • 1 each large onion, diced
  • 5 Cups chicken Stock
  • 1 Cup sweet corn
  • 2 Cups mixed vegetables
  • 8 oz tomato sauce
  • 15 oz stewed tomato
  • 1 each medium potato, diced
  • 1 Tbsp chili powder
  • 1 cup small pasta shape, dry
  • Salt and pepper

Instructions

  1. In a large stock pot, brown the ground beef into small crumbles. Add diced onion and sauté until tender and translucent.
  2. Add chili powder and stir to ensure no clumps of spice remain.
  3. Add corn and mixed vegetables. If fresh, cook for two minutes; however, if frozen, cook until thawed and add 2 minutes.
  4. Next, add in tomato sauce, and stewed tomatoes (I chopped the stewed tomatoes into more of a dice, as the cans I found come as sliced tomatoes) and allow them to simmer for 2 minutes.
  5. Then add 5 Cups of stock, stir, bring to a boil, then reduce back to a simmer and allow to simmer for 45 minutes.
  6. Finally, add potato and small shaped pasta (I try to find alphabet pasta) and allow them to simmer until potatoes can be cut with a fork and pasta is cooked, about 15 minutes
  7. Taste and adjust salt and pepper as needed.
